Cheap and simple turkey pate – don’t let any go to waste after the 25th Dec!

This recipe is so quick and easy and can be made with turkey or chicken. It’s a great way of using up leftover meat, especially over the Christmas period!



75g butter

1 large onion, chopped

400g roughly chopped cooked turkey or chicken

60ml single cream

60ml dry sherry

2 tbsp flat leaf parsley

sea salt/black pepper to taste



Heat a frying pan (medium heat) and add the butter and onion. Stir well, cover and cook gently for 10 minutes until the onion is transparent.

Remove from the heat and tip into a food processor with the meat. Blitz into a chunky puree then add the rest of the ingredients and blitz again until smooth.

Spoon into a serving dish or little ramekins, cover and refrigerate for at least 3 hours.

Serve with toast, crackers or chunky bread, it’ll serve 4-6 people.
