I adore this recipe, the granola is super tasty and will happily last in a sealed tub for 2 weeks. You can add any of your own extras like nuts and dried fruit as you wish too, to personalise it to your own taste. It is super filling and a great source of fibre for the tum. This makes an enormous batch, so you may want to halve the recipe if need be.
1 tbsp vegetable oil
100ml clear honey
50ml maple syrup
100g flaked almonds
100g rice crispies
50g desiccated coconut
*To keep costs down, store the leftover coconut, almonds, sultanas, oats and rice crispies in sealed containers, and maple syrup in the fridge – ready to make up a new batch in two weeks time without spending a penny.
Preheat the oven to 140 degrees. Weigh the oil, honey and maple syrup out into a heat proof bowl and pop into the microwave for one minute. Meanwhile, grab a LARGE mixing bowl and add the oats, rice crispies and almonds and stir well. When the microwave pings, pour the wet ingredients into the dry ingredients and stir thoroughly to ensure that it is well coated.
When mixed, spoon onto a large baking tray and pop into the oven for 15 minutes until everything is golden and crisp. Allow to cool, then break up any big clumps and add the desiccated coconut, sultanas and any other nuts and dried fruit you wish.
Then, simply put into an airtight container and enjoy for the next couple of weeks! Each morning I add a dollop of natural yoghurt, strawberries and raspberries to mine, and it is absolutely delicious! 🙂
