Bonkers for gluten-free banana bread!

My friend sent me this recipe and I LOVE it! It’s a great way to use up old bananas and is so simple and quick to prepare, it’ll soon become a family favourite!



125g butter

150g caster sugar

1 teaspoon vanilla extract

2 over ripe bananas

190g gluten-free self-raising flour

60g milk

1 egg

Optional – sultanas, nuts



Preheat the oven to 190°C / Fan 170°C / Gas 5.

Melt the butter in the microwave or over the hob, then add it to a mixing bowl (or machine mixer) with the sugar and vanilla extract and mix well. Then add the bananas and mix again – if you are mixing by hand it may help to mash the bananas first but I don’t find this necessary with a machine. Add the egg and mix again.

Then add in the flour and milk gently; this bit is best done by hand to fold in the flour – be careful not to over mix. If you are adding any sultanas or nuts, stir these in now. Finally, pour the mixture into a greased loaf tin and bake for 35-45 minutes until golden brown. Make sure it is completely cooled before cutting, to stop it from crumbling.
