Crispy chilli chicken noodles

This recipe is one of our favourite dinners! It’s so quick and simple but ridiculously tasty. It came about when I threw some ingredients together to make a sauce when I didn’t have what I needed for a different recipe, and now we eat it all the time! This will serve a family of four.



For the chicken:

2 chicken breasts, sliced thinly

2 tsp mild chilli powder

2 tsp garlic powder

50g flour


For the stir fry / sauce:

3 nests of noodles

500g bag of frozen stir-fry vegetables

1 tbsp soy sauce

2 tbsp hoisin sauce

1 tbsp sesame oil

½ tsp garlic powder



For the chicken:

Mix the flour, garlic powder and chilli powder together, then coat the chicken breast slices until covered.

To fry: Fry, with oil, on a medium heat until cooked through and crispy.

To bake: Preheat the oven to 200°C / Fan 180°C / Gas 6.  Grease or line a baking tray with baking paper. Spread out the chicken on the tray, spray with oil and bake until crispy – around 20/25 minutes.


For the stir-fry:

Cook the noodles as per packet instructions. Meanwhile, in a large frying pan, fry the stir-fry veg for around 5 minutes over a medium-high heat. Then add the soy sauce, garlic powder, hoisin sauce and sesame oil, mix well and continue to fry for another minute or two. Finally, toss in the noodles and mix until coated. Serve with the crispy chicken.
