You can tell when we’re due a food shop as I’ll make porridge for breakfast and flapjack for snack! 😆 These are so yummy, quick and easy – so it’s a great recipe to pull together from your pantry cupboard (in less than 5 minutes!) when you haven’t got much food in. It’s a great breakfast on the go too, as the oats will keep you fuelled until lunchtime. This recipe makes about 15 portions.
100g demerera sugar
2 tbsp golden syrup
250g porridge oats
75g sultanas / dried fruit
Preheat the oven to 180°C / Fan 160°C / Gas 4. Line a tin (I use one approx 30cm x 20cm) with baking paper so that your flapjack doesn’t stick.
Melt the butter, sugar and syrup together – either in the microwave or in a pan on the hob. I prefer to use the microwave for speed and ease.
Once it’s melted remove it from the heat, add the oats and fruit, and mix it all well. Then tip the mixture into the tin and push it down flat and into the corners.
Bake for 20 minutes, and allow it to cool before slicing it into about 15 squares. Store in a sealed tub – this recipe will freeze well too.
