My big bolognese recipe is a great batch cook meal and I’ve tried to make it as easy, budget friendly and big as possible! It makes enough for four meals for our family of 4 and it freezes perfectly, so I do a batch once a month in my ginormous saucepan and once a week it gives me a night off from cooking. The kids LOVE it!
To freeze, just share it into 4 equal tubs and then defrost in the fridge before you want it.
500g pork mince
500g beef mince
600g frozen vegetable base bag – carrots, onion, celery
4 cloves of garlic, chopped finely
4 cans of plum tomatoes, blended
500ml gluten-free beef stock
3 tbsp Worcester sauce (check it’s gluten free, but most are)
1 tube of tomato puree
1 tsp sugar
1 tsp dried basil
1 tsp cayenne pepper
1 tsp dried oregano
2 tbsp oil
Pinch of salt
In a VERY large saucepan first fry off the meat in the oil, until it has been browned. Then, push the meat to the side, add the bag of frozen veg and garlic, and fry for a few minutes until it softens.
Meanwhile, blend the tomatoes in a big bowl with a hand-blender then add them to the pan, with the stock. Finally, add everything else (worcester sauce, tomato puree, sugar, dried basil, cayenne pepper, dried oregano, pinch of salt), stir well and bring to the boil. Then pop on the lid, reduce to a simmer and leave it on the heat for 1½ – 2 hours, stirring every so often.
Use cornflour if you need to thicken the sauce, but I find it’s the perfect thickness. Then simply load into 4 equal portions in freezer-safe tubs and you’ve got 4 dinners ready to go when you need them. Just defrost, heat through and serve over your favourite gluten-free pasta. (Asda gluten-free pasta is tasty and really cheap! 3 bags for £1.20!)
