Black bean tostadas recipe

This recipe is so easy to make, really filling and very tasty! My husband and I both love this one, in fact we had it for lunch today! This recipe will serve a family of four but if only two are eating it may be worth cooking the whole batch anyway as the filling makes a tasty wrap for work lunches – just store in the fridge and you have a ready made delicious lunch for the next day.



8 tortilla wraps

2 tbsp olive oil

1 red onion, chopped

3 garlic cloves, chopped

1 tbsp smoked paprika

1 tbsp ground cumin

5 tbsp cider vinegar

3 tbsp clear honey

3 x 400g cans black beans, drained and rinsed

creme fraiche, to serve


*Optional extra toppings: Grated cheese, diced avocado, shredded lettuce, diced tomato, peppers



Preheat the oven to 200°C / Fan 180°C / Gas 6.

Brush the tortillas with a little oil and put in a single layer onto a baking tray lined with baking paper. Cook for about 8 minutes until crisp. Meanwhile, in a large frying pan, heat the remaining oil and cook the onion and garlic for five minutes. Then add the smoked paprika, cumin, vinegar and honey and cook for two more minutes.

Finally, add the beans, season with salt and pepper, and heat through. Spread the mixture over the crispy tortillas and top with a little creme fraiche and any other toppings you like – we love lettuce and grated cheese with ours too. So quick and simple but very tasty!
