Easy, big batch french onion soup recipe

This soup is so easy and really yummy – it’s one of our favourites! The only bad bit is chopping 1kg of onions – I usually borrow the kids’ goggles so I don’t sob my way through it! 😂 It freezes well and this recipe will make enough for about 8 portions. We share it between tubs and then defrost as needed when we fancy an easy lunch.



50g butter

1 tbsp cooking oil

1kg onions, finely sliced

1 tsp sugar

2 tbsp plain flour

1.5 litres of strong beef stock (I throw in an extra stock cube)

4 tsp garlic powder

1 tbsp worcester sauce


To accompany it:

50g grated cheese




Heat the butter and oil in a large saucepan over a medium heat, add the onions and fry for about 10 minutes. Next, add the sugar, reduce the heat and continue to cook for another 20 minutes while the onions caramelise. (Stir every so often to stop them sticking.)

Then, add the flour and stir through, coating the onions. Add the stock, garlic powder and worcester sauce and simmer for 20 minutes – it’s as easy at that! Share between tubs and allow to cool before freezing.

If you’re having it with cheesy bread – slice the baguette, sprinkle it with cheese and pop under the grill.
